There are multiple solution sets; I think you need to define your requirements a bit more. For example, is the Polycom output audio loud enough for the room, and you just need a couple of remote wireless mics? The Revolabs HD Dual/Single mics have an analog output that plug into many Polycom phones for a wireless mic solution.
If you&#;re using Skype, how does the Polycom come into play with your laptop? Calling in on the Polycom and using the laptop for Skype video and screen sharing? You might go to a USB to run off your laptop instead, like the Revolabs UC 500 or the Yamaha YVC- for louder playback and daisy-chained mics for rooms up to 40 people.
For video there are a variety of camera offerings that mostly depend on the type of interface you want to use. Logitech has many types of USB cameras that work pretty well in fixed positions.
For your new rooms you should definitely scope out requirements and nice-to-haves in terms of audio, video, services and wired/wireless.
